Spicy Honey Glazed Salmon with Citrus Quinoa Salad

Ingredients
4 salmon fillets (6 oz each)
1/4 cup honey
2 tbsp soy sauce
1 tbsp sriracha sauce
2 cloves garlic, minced
1 cup quinoa
2 cups vegetable broth
1 orange, segmented
1 grapefruit, segmented
1/4 cup chopped fresh cilantro
1/4 cup chopped toasted almonds
1/4 cup olive oil
Salt and pepper to taste
Instructions
In a small bowl, mix honey, soy sauce, sriracha, and minced garlic to make the glaze.
Season salmon fillets with salt and pepper, then brush with the honey glaze.
Preheat oven to 400°F (200°C) and bake the salmon for 12-15 minutes until cooked through.
In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until quinoa is cooked and liquid is absorbed.
Fluff the quinoa with a fork and let it cool slightly.
In a large bowl, combine the cooked quinoa, orange segments, grapefruit segments, cilantro, toasted almonds, olive oil, salt, and pepper. Mix well.
Serve the spicy honey glazed salmon over the citrus quinoa salad.
Garnish with additional fresh cilantro and a drizzle of olive oil, if desired.
