Ingredients
2 ripe bananas
4 slices of thick bread
2 eggs
1/2 cup milk
1 tsp vanilla extract
1/2 tsp cinnamon
2 tbsp butter
Maple syrup and powdered sugar for serving
Instructions
Peel and mash the bananas in a bowl until smooth.
In a separate bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
Spread the banana mixture onto 2 slices of bread and top with the remaining slices to make 2 sandwiches.
Dip each sandwich into the egg mixture, ensuring both sides are well coated.
In a skillet over medium heat, melt butter and place the sandwiches in the skillet.
Cook for about 3-4 minutes on each side until golden brown and crispy.
Remove from the skillet and slice each sandwich diagonally.
Serve hot with maple syrup drizzled on top and a dusting of powdered sugar.
