Ingredients
1 tbsp olive oil
1/2 onion, finely chopped
1 garlic clove, minced
1/2 red bell pepper, diced
2 cups fresh spinach, chopped
1 cup frozen peas
4 large eggs
1/4 cup crumbled feta cheese
Salt and pepper to taste
1/2 tsp cumin
1/2 tsp paprika
1/4 cup chopped fresh parsley
Instructions
Heat olive oil in a large skillet over medium heat.
Add the onion and garlic, sauté until softened, about 3 minutes.
Add the red bell pepper and cook for another 2 minutes.
Stir in the spinach and peas, let them wilt and cook for 3-4 minutes.
Season with salt, pepper, cumin, and paprika.
Create 4 wells in the vegetable mixture and crack an egg into each well.
Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
Sprinkle the feta cheese over the eggs and vegetables.
Garnish with chopped parsley before serving.
Serve the Green Shakshuka hot with crusty bread or pita.
