Green Shakshuka with Feta Cheese

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 red bell pepper, diced
  • 2 cups fresh spinach, chopped
  • 1 cup frozen peas
  • 4 large eggs
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion and garlic, sauté until softened, about 3 minutes.
  3. Add the red bell pepper and cook for another 2 minutes.
  4. Stir in the spinach and peas, let them wilt and cook for 3-4 minutes.
  5. Season with salt, pepper, cumin, and paprika.
  6. Create 4 wells in the vegetable mixture and crack an egg into each well.
  7. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
  8. Sprinkle the feta cheese over the eggs and vegetables.
  9. Garnish with chopped parsley before serving.
  10. Serve the Green Shakshuka hot with crusty bread or pita.
