Savory Spinach and Feta Breakfast Quiche

Ingredients

  • 1 pre-made pie crust
  • 6 large eggs
  • 1 cup milk
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the red onion until translucent, about 3 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  5. Place the pre-made pie crust in a pie dish and crimp the edges.
  6. Spread the sautéed spinach and onion mixture evenly over the pie crust.
  7. Sprinkle crumbled feta cheese on top of the spinach mixture.
  8. Pour the egg mixture over the spinach and feta in the pie crust.
  9. Arrange the halved cherry tomatoes on top of the quiche.
  10. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top.
  11. Remove from the oven and let it cool for a few minutes before slicing and serving.
