Savory Spinach and Feta Omelette

Ingredients

  • 3 large eggs
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced onion
  • 1/2 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the eggs until well combined. Season with salt and pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the diced onion and red bell pepper to the skillet. Sauté for 2-3 minutes until softened.
  4. Add the chopped spinach to the skillet and cook for another 1-2 minutes until wilted.
  5. Pour the whisked eggs into the skillet, swirling to cover the vegetables evenly.
  6. Sprinkle the crumbled feta cheese on top of the omelette.
  7. Let the omelette cook undisturbed for 2-3 minutes until the edges start to set.
  8. Carefully fold the omelette in half using a spatula.
  9. Cook for another 1-2 minutes until the eggs are fully cooked and the cheese is melted.
  10. Slide the omelette onto a plate and serve hot.
