Savory Spinach and Feta Quiche

Ingredients

  • 1 pre-made pie crust
  • 5 large eggs
  • 1 cup milk
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pre-made pie crust in a pie dish and crimp the edges. Set aside.
  3. In a skillet, heat olive oil over medium heat. Add the chopped red onion and sauté until translucent.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  5. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  6. Spread the sautéed spinach and onions evenly over the bottom of the pie crust. Sprinkle crumbled feta cheese on top.
  7. Gently pour the egg mixture over the spinach and feta in the pie crust. Arrange the halved cherry tomatoes on top.
  8. Bake in the preheated oven for 35-40 minutes or until the quiche is set and the top is golden brown.
  9. Remove from the oven and let it rest for 5 minutes before slicing and serving.
  10. Serve the savory spinach and feta quiche warm for a delicious breakfast.
