Caramelized Banana Pudding

Ingredients

  • 2 ripe bananas
  • 1/2 cup sugar
  • 2 tbsp butter
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 3 large egg yolks
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract
  • 1 cup vanilla wafer cookies, crushed
  • Whipped cream for topping

Instructions

  1. Peel and slice the bananas. In a skillet, melt butter over medium heat. Add sugar and cook until it caramelizes, about 3-4 minutes.
  2. Add the sliced bananas to the caramelized sugar, sprinkle with cinnamon and salt, and cook for another 2 minutes until bananas are caramelized. Remove from heat and set aside.
  3. In a saucepan, heat the milk and cream over medium heat until steaming but not boiling. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until smooth.
  4. Slowly pour the hot milk mixture into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
  5. Remove from heat and stir in the vanilla extract. Let the pudding cool slightly.
  6. In serving glasses or a large bowl, layer the crushed vanilla wafer cookies, caramelized bananas, and pudding mixture.
  7. Repeat the layers until all ingredients are used up, finishing with a layer of pudding on top.
  8. Cover with plastic wrap and refrigerate for at least 2 hours to set.
  9. Before serving, top with a dollop of whipped cream and a sprinkle of crushed vanilla wafer cookies for garnish.
