Ingredients
1 cup fresh raspberries
200g dark chocolate, chopped
1 cup heavy cream
1/4 cup granulated sugar
1 tsp vanilla extract
1/4 tsp salt
1/2 cup crushed chocolate cookies
Fresh mint leaves for garnish
Instructions
In a blender, puree half of the raspberries until smooth. Pass through a fine mesh sieve to remove seeds, then set aside.
Melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Let it cool slightly.
In a separate bowl, whip the heavy cream with sugar, vanilla extract, and salt until stiff peaks form.
Fold the melted chocolate into the whipped cream until fully combined.
Layer the parfait glasses with alternating spoonfuls of chocolate mousse, raspberry puree, and crushed cookies.
Top each parfait with the remaining fresh raspberries and mint leaves for garnish.
Refrigerate the parfaits for at least 2 hours to set before serving.
