Chai Spiced Rice Pudding

Ingredients

  • 1 cup Arborio rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 2 chai tea bags
  • 1 cinnamon stick
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/4 cup raisins
  • 1/4 cup chopped pistachios
  • 1 tsp vanilla extract

Instructions

  1. In a saucepan, combine the milk and chai tea bags. Heat over low heat for 10 minutes to infuse the milk with chai flavor.
  2. Remove the tea bags and add in the Arborio rice, sugar, cinnamon stick, cardamom, cloves, and ginger. Stir well.
  3. Cook the rice pudding over low heat, stirring frequently, for about 30-35 minutes until the rice is cooked and the mixture is creamy.
  4. Stir in the raisins, pistachios, and vanilla extract. Cook for an additional 5 minutes.
  5. Remove the cinnamon stick and transfer the rice pudding to serving bowls.
  6. Serve warm or chilled, garnished with additional pistachios and a sprinkle of ground cinnamon.
