Citrus Honey Panna Cotta with Berry Compote

Ingredients

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup honey
  • Zest of 1 lemon
  • Zest of 1 orange
  • 2 tsp gelatin powder
  • 1/4 cup cold water
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar
  • 1 tsp lemon juice
  • Fresh mint leaves for garnish

Instructions

  1. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  2. In a saucepan, combine heavy cream, milk, honey, lemon zest, and orange zest. Heat over medium heat until it just begins to simmer, stirring occasionally.
  3. Remove the cream mixture from heat and stir in the bloomed gelatin until completely dissolved.
  4. Strain the mixture through a fine-mesh sieve to remove the zest. Divide the mixture among serving glasses or ramekins.
  5. Chill the panna cotta in the refrigerator for at least 4 hours or until set.
  6. For the berry compote, combine mixed berries, sugar, and lemon juice in a saucepan over medium heat. Cook until the berries release their juices and the mixture thickens slightly, about 10 minutes.
  7. Allow the berry compote to cool slightly before spooning it over the chilled panna cotta.
  8. Garnish with fresh mint leaves before serving.
